Cornmeal-crusted Catfish

This recipe of catfish nuggets coated with cornmeal is very easy to make. Its crust gives a yummy, crispy texture outside while keeping the fish moist and tender inside. It is a delightful meal. Best when paired with French Fries and with dipping sauce. 


CORNMEAL-CRUSTED CATFISH

INGREDIENTS:

1 pound frozen catfish nuggets
1/4 cup buttermilk or plain, non-fat yogurt
1/2 teaspoon hot sauce
1/2 cup cornmeal
2 tablespoon butter
1 tablespoon olive oil
Salt and pepper, to taste

DIRECTIONS:

1. Stir together buttermilk or yogurt and hot sauce; brush on catfish and allow to marinate for 10 minutes. Coat catfish lightly with cornmeal and sprinkle with salt and pepper to taste.

2. Melt butter and olive oil in a nonstick skillet over medium high heat.

3. When skillet is hot, saute catfish about 3 minutes on each side, turning only once, until golden and crisp.

Serves 4.

For a heavier meal, serve alongside collard greens, corn bread and any type of beans (I used black beans).
