Baked Chicken Leg Quarters with Braised Onions

A simple, one dish wonder for baked chicken leg quarters. I love how tender and moist the chicken become after baking and the sauce tastes great! You need only 3 ingredients and in about an hour and a half you have yourself a fantastic chicken meal. This is my new go-to recipe when using chicken leg quarters. Quick. Simple. Delicious. Here's to a great dinner!

BRAISED CHICKEN LEG QUARTERS WITH BRAISED ONIONS
Prep Time: 5 minutes
Cook Time: 90 minutes
Total Time: 1 hour 35 minutes

INGREDIENTS:

4 chicken leg quarters
1 large onion* (or two smaller onions), sliced
1 bay leaf
Salt and pepper, to taste

METHOD:

1. Heat oven to 350°F. Layer onions in the bottom of a heat-proof skillet, casserole dish or baking dish. Season with salt and pepper. Add the bay leaf.

2. Rinse leg quarters and pat dry. Season liberally with salt and pepper. Lay the chicken over the onions, arranging pieces so that they are in a single layer. 

3. Bake at 350°F until juices run clear or until the internal temperature reaches 170°, (about 1 1/2 hours). Discard bay leaf.

4. Serve with rice or mashed potatoes. Be sure to spoon some of the onions and pan juices over the top. 
(I did not add the onions and sauce/gravy on the chicken posted above).

*Note:
~Toss the onions in flour before cooking and the juices make their own gravy.
