Filipino Chicken Adobo

Adobo is one of the authentic, most popular staple dishes in my mother county, the Philippines. There is no one way in cooking this Filipino delicacy as adobo is very versatile. Every region in the islands have their own versions  on how they want to cook it. You can use pork instead of chicken, or use them altogether. Some people boil the meat until almost dry or pan-fry the meat after being marinated for few hours. Some put brown or white sugar while others add onions, potatoes, boiled eggs, even chilies to give it a nice, spicy kick. Although there are many different variations on how to cook adobo, the standard ingredients mainly consist of soy sauce, vinegar, peppercorns, garlic and bay leaves.
Ahhh, smelling the adobo cooking in the kitchen enveloping the whole house of its aroma, enjoying it on the plate full of rice smothered with sauce, tasting every bite of its yummy goodness...it surely reminds me of my childhood!

FILIPINO CHICKEN ADOBO (ADOBONG MANOK)
Prep time: 10 minutes
Inactive: 1 hour
Cook: 50 minutes
Total: 2 hours
Yields: 6-8 servings

INGREDIENTS:
4 to 5 pounds chicken thighs 
1/2 cup white vinegar
1/2 cup soy sauce
4 cloves garlic, crushed
1 teaspoon black peppercorns
3 bay leaves
Steamed rice, for serving

DIRECTIONS:
Combine chicken thighs, vinegar, soy sauce, garlic, peppercorns and bay leaves in a large pot. Cover and marinate the chicken in the refrigerator for 1 to 3 hours.
Bring the chicken to a boil over high heat. Lower the heat, cover and let simmer for 30 minutes, stirring occasionally. 
Remove the lid and simmer until the sauce is reduced and thickened and the chicken is tender, about 20 more minutes. 
Serve with steamed rice.

I used Datu Puti vinegar and Datu Puti soy sauce for more authentic Filipino adobo taste. You can find them in any Filipino asian store or can be ordered online.

Crock Pot Filipino Chicken Adobo

When life gets so busy and I have no time to stay long in the kitchen to cook, using the reliable crock pot/slow cooker is always the answer. After cooking this chicken adobo for 5 hours, the meat comes out so tender, juicy and tasty.


CROCK POT FILIPINO CHICKEN ADOBO
Cook time: 5 hours 8 minutes
Serves 4-6

INGREDIENTS:

6 skin-on, bone-in chicken thighs
1 teaspoon whole black peppercorns
8 cloves garlic, smashed with the side of a knife and peeled
2 bay leaves
1/4 cup soy sauce
1/2 cup distilled white vinegar

DIRECTIONS:

1. In a crock pot, add all the ingredients in the order listed. Ensure the peppercorns and bay leaves are submerged into the liquid.

2. Cook on high for 5 hours.

3. Transfer the chicken to a baking dish and add a half cup of the reserved liquid to the bottom of the dish.

4. Place the chicken underneath the broiler in the oven to brown; approximately 8 minutes, depending on the temperature of the broiler.

5. Remove the chicken from the oven. Serve it with rice.

Stir-Fried Beef & Bok Choy with Ginger

 I love this recipe. It has a wonderful blending of flavors. Simple, quick to make, healthy, and tastes delicious!
  STIR-FRIED BEEF & BOK CHOY WITH GINGER
Serves 4

INGREDIENTS:

1 pound (500 g) flank steak, thinly sliced across the grain
1 tablespoon peeled and grated fresh ginger
1 pound (500 g) baby bok choy
2 tablespoon sherry cooking wine
1 tablespoon soy sauce
2 cloves minced garlic
1/2 teaspoon Asian chile paste
2 teaspoons peanut oil (or olive oil)

DIRECTIONS:

1. In a small bowl, stir together the sherry, soy sauce, and chile paste. 

2. Cut the bok choy lengthwise into halves or quarters (depending on size).

3. In a work or large frying pan, heat 1 1/2 teaspoon of oil over high heat. Add the bok choy and stir-fry just until tender crisp (about 3 to 4 minutes). Transfer to a bowl.

4. Add the remaining 1/2 teaspoon oil to the pan. Add the garlic and ginger and stir-fry until fragrant but not browned (15-30 seconds).

5. Add the beef and cook, stirring, just until no longer pink (about 2 minutes).

30-Minute Ginger Beef

I love easy to make recipes and when they look good and taste great, I am sold. This mouthwatering dish is flavorful and very delicious, it's definitely a keeper!

30-MINUTE GINGER BEEF
Prep Time: 20 minutes
Cook Time: 10 minutes
Total Time: 30 minutes

INGREDIENTS:

1 pound skirt steak, sliced thinly
3 cloves garlic, minced
2 teaspoons fresh ginger, grated
2 cups carrots, julienned
1/2 cup white onion, finely chopped
1/2 cup soy sauce
1/4 cup white vinegar
2 tablespoons sesame oil
1/4 cup vegetable oil, plus more for frying
1/2 teaspoon black pepper
1/2 cup brown sugar, lightly packed
1/2 cup cornstarch
1/4 teaspoon dried chili flakes
2 tablespoons sesame seeds

DIRECTIONS:

1. Toss the skirt steak with the cornstarch in a large bowl and set aside.

2. Over medium heat, add the vegetable oil and onions to a sauce pan. Saute for two minutes until onions are translucent.

3. Add the carrots to the onions and saute for 3-4 minutes until tender.

Honey Ginger Pork Stir Fry with Green Beans

Stir fry is the fastest and simplest way to make dinner for busy weeknights. This recipe is very delicious and is one of my hubby's favorite dish! The pork is stir fried in sweet honey-ginger sauce that is so flavorful.  A quick and easy meal with just few simple ingredients and in 15 minutes you will have a hearty and yummy dinner.  

 HONEY GINGER PORK STIR FRY WITH GREEN BEANS
Prep Time: 5 minutes
Cook Time: 10 minutes

INGREDIENTS:

1/4 cup honey
2 tablespoons soy sauce
2 teaspoons cornstarch 
2 inches fresh ginger, grated (about 2 teaspoons)
4 garlic cloves, minced
2 tablespoons cooking oil
1 pound pork tenderloin, cut into 1-inch pieces
*cooked white or brown rice (for serving)

Caramelized Chicken Drumsticks

This is a one-pan perfection! A quick and easy chicken recipe that is flavorful and perfect to serve up for dinner.


CARAMELIZED CHICKEN DRUMSTICKS
Preparation Time: 15 minutes
Bake Time: 50 to 60 minutes
Servings: 4

INGREDIENTS:

3 pounds chicken drumsticks (about 8)
1 cup honey
1/2 cup soy sauce
2 tablespoons canola oil (or vegetable oil)
2 tablespoons peanut butter
2 tablespoons grated fresh ginger
1 tablespoon fish sauce
2 cloves garlic, minced
1/8 teaspoon salt
2 tablespoons thinly sliced fresh chives (optional)

DIRECTIONS:

1. Preheat oven to 375°F. Line a 13x9x2-inch baking pan with foil; set aside.

2. In a very large bowl combine honey, soy sauce, oil, peanut butter, ginger, fish sauce, garlic and salt. Whisk to combine. Add chicken; toss to combine.

3. Arrange chicken in a single layer in the prepared pan.

Honey Soy Chicken

This simple and easy to make Asian dish is absolutely delicious! The chicken is savory, juicy, and flavorful. The ingredients are very simple and I bet you already have them (or most of it) in your pantry. This yummy chicken goodness is another keeper in my books. So give it a try, you're going to love it for sure!

HONEY SOY CHICKEN
Prep Time: 5 minutes
Cook Time: 40 minutes
Total Time: 45 minutes
Servings: 4


INGREDIENTS:

1 1/2 to 2 pounds boneless, skinless chicken thighs (cut most of the fat and discard)
3 tablespoons vegetable oil
3 tablespoons low sodium soy sauce
1 teaspoon sesame oil
5 tablespoons honey
4 cloves of garlic, minced
1/2 teaspoon ground ginger
1/2 teaspoon ground black pepper

DIRECTIONS:

1. Preheat oven to 425°F. Line an 8x8" oven-proof pan with 2 layers of tin foil.

2. In small bowl, whisk together vegetable oil, soy sauce, sesame oil, honey, garlic, ground ginger, and pepper.

3. Place the chicken thighs in the foil layered pan then pour the mixture on top of it. Turn the chicken around in the sauce to make sure it gets all coated.


4. Bake, uncovered, for 40 minutes, checking occasionally to make sure the tops are not browning too quickly. If they are, cover with foil and resume baking until chicken is done.

Shrimp with Snow Peas Stir-Fry

If you crave for a classic Chinese stir-fry that is simple, quick and easy to make, then this dish will do the trick. Stir-fry the shrimp with snow peas, ginger, garlic, and few seasonings and you have yourself a delicious meal.

 SHRIMP WITH SNOW PEAS STIR-FRY
Prep Time: 20 minutes
Cook Time: 5 minutes
Serving: 4

INGREDIENTS:

Marinade:
2 teaspoons cornstarch
1 tablespoon Chinese cooking wine or dry sherry 
1/2 teaspoon salt

Stir Fry:
1 pound shrimp, peeled and deveined
2 tablespoons peanut oil (or other vegetable oil)
1 tablespoon minced ginger
3 garlic cloves, sliced thinly
1/2 pound snow peas, strings removed
2 teaspoons soy sauce
1/4 cup chicken stock
4 green onions, white and light parts, sliced diagonally
2 teaspoons dark roasted sesame oil

DIRECTIONS:

1. In a large bowl, marinade the shrimp by mixing all the ingredients for the marinade. Add the shrimp and toss to coat. Let sit for 15 to 20 minutes while you prepare the snow peas, ginger, and 

2. Heat a wok or large saute pan over high heat for 1 minute. Add the peanut oil and let it get hot, about 30 seconds. Add the ginger and garlic and toss to combine. Stir-fry for about 30 seconds.

Honey Garlic Baked Pork Bites

Looking for a sweet and sticky pork recipe that don't need a plethora of ingredients to chop, dice, and slice? Look no more. This dish hits the mark. The pork is so delicious with its sweet, savory, garlicky flavor and it has the perfect amount of heat...porky goodness!



HONEY GARLIC BAKED PORK BITES
Prep time: 10 minutes
Cook time: 2 hours 15 minutes
Total time: 2 hours 25 minutes
Serving: 4

INGREDIENTS:

1 tablespoon olive oil
8 cloves garlic, finely minced
1 large onion, finely chopped
3/4 cup honey
1/2 teaspoon dried chili flakes
1/4 teaspoon salt
1/4 teaspoon pepper
2 pounds pork loin roast, cut into 1" cubes
parsley, chopped for garnish
sesame seeds, for garnish

DIRECTIONS:

1. Preheat the oven to 350°F.
2. In a large oven-safe baking dish, gently toss the cubed pork with the salt and pepper, onion and olive oil.

3. Cover the dish with aluminum foil and bake for 1 hour.

4. Remove the pan from the oven and add the garlic, honey, and chili flakes. Gently move the pork bites around to help mix in the honey and garlic.

5. Place the aluminum foil back on the baking dish and return to the oven for another 30 minutes.

A 20-minute Meal: Honey Garlic Shrimp

This recipe is fabulous! It is very easy and the taste is restaurant quality. I love making meals that are not so time consuming but still taste good. Aside from the yummy taste, this dish require a little effort. It is ready in less than 30 minutes! Every time I make this for my family there's nothing left on the plate, they gobble it up and left the platter empty clean. Yes, even the sauce. 

Seriously, this recipe is quick and easy to make and the flavor is incredible. This is one of the many dishes that I make again and again.

20-MINUTE HONEY GARLIC SHRIMP

Prep Time: 15 minutes
Total Time: 20 minutes
Serves: 4

INGREDIENTS:

1/3 cup honey
1/4 cup soy sauce (I used reduced sodium)
1 tablespoon minced garlic
1 teaspoon minced fresh ginger (optional)
1 pound medium uncooked shrimp, peeled and deveined*
2 teaspoon olive oil
chopped green onion or sliced scallion, for garnish (optional)
parsley, for garnish (optional)

DIRECTIONS:

 1. Whisk the honey, soy sauce, garlic, and ginger (if using) together in a medium bowl.

 2. Place shrimp in a large zipped-top bag or Tupperware.

Pour 1/2 of the marinade mixture on top, give it all a shake or stir, then allow shrimp to marinate in the refrigerator for 15 minutes or for up to 8-12 hours.

Mongolian Beef

  Every once in a while I crave for a great Chinese dish. Having said that, Mongolian beef always tops the list. This is my go-to recipe when my craving strikes. It is very easy to make, the ingredients are simple, and it is delicious as it looks. The combined flavor of the beef and sauce...hmmm, simply amazing. This is a fantastic recipe and it is definitely a keeper!

Ingredients

1 pound flank steak
2 teaspoons vegetable oil
1/2 teaspoon ginger, minced
1 tablespoon garlic, chopped
1/2 cup soy sauce
1/2 cup water
3/4 cup dark brown sugar
1 cup vegetable oil, for frying
1/4 cup cornstarch
2 large green onions, sliced (I added 2 more green onion slices for garnish)
sesame seeds, (for garnish, optional)
Directions

To make the sauce (step 1 to step 3)
1. In a medium saucepan, heat 2 teaspoons of vegetable oil over medium/low heat. Don't get the oil too hot.
2. Add ginger and garlic to the pan and quickly add the soy sauce and water before the garlic scorches.
3. Dissolve the brown sugar in the sauce, then raise the heat to about medium and boil the sauce for 2 to 3 minutes or until the sauce thickens. Remove from the heat.
4. Slice the flank steak against the grain into strips.
5. Dip the steak pieces into the cornstarch. Let the beef sit for about 10 minutes so that the cornstarch sticks.
6. Heat one cup of oil in a wok (or use a large skillet).
