Caramelized Chicken Drumsticks

This is a one-pan perfection! A quick and easy chicken recipe that is flavorful and perfect to serve up for dinner.


CARAMELIZED CHICKEN DRUMSTICKS
Preparation Time: 15 minutes
Bake Time: 50 to 60 minutes
Servings: 4

INGREDIENTS:

3 pounds chicken drumsticks (about 8)
1 cup honey
1/2 cup soy sauce
2 tablespoons canola oil (or vegetable oil)
2 tablespoons peanut butter
2 tablespoons grated fresh ginger
1 tablespoon fish sauce
2 cloves garlic, minced
1/8 teaspoon salt
2 tablespoons thinly sliced fresh chives (optional)

DIRECTIONS:

1. Preheat oven to 375°F. Line a 13x9x2-inch baking pan with foil; set aside.

2. In a very large bowl combine honey, soy sauce, oil, peanut butter, ginger, fish sauce, garlic and salt. Whisk to combine. Add chicken; toss to combine.

3. Arrange chicken in a single layer in the prepared pan.


4. Bake 50 to 60 minutes or until chicken is dark brown, coating is caramelized, and an instant-read thermometer inserted into the thickest part of the chicken reads at least 165°F, turning occasionally. If desired, sprinkle chicken with chives. Serve with cooking liquid.
